BURGER CUPCAKES WITH A SIDE OF FRIES

A couple of weeks ago my roommate asked me to help her make a cake for her cousins birthday, who’d be joining us in Victoria for the weekend. After much debate and much foodgawker surfing, we (excitedly) settled on cute little burger cupcakes and fries. We got the idea from a Father’s Day post on Bakerella where boxed cake, brownies and sugar cookies were used. At first we decided to save ourselves some trouble and do this as well. We picked up two organic cake and brownie mixes (on sale), but couldn’t find any sugar cookies. I made the brownies the night before the cake, and was a little confused, because the instructions were to add BUTTER and eggs. Not even oil! I subbed oil anyways, but it made the brownies super elastic and didn’t make nearly as much batter as box brownies usually do. They ended up hardly filling an 8x8 baking pan, but did turn out relatively fine. They were a bit chewy, but otherwise okay.

The following morning, Jenna made vanilla cupcakes from the box mix. It was a bit of a disaster. The cups were filled too high and consequently spilled over the rim and made an interesting type of cake. We did a little taste test to see if they were even remotely usable, and they were AWFUL. We scrapped those and I took over and started from scratch. I made plain vanilla cupcakes using a modified version from Ming Makes Cupcakes and sugar cookies cut thinly to make fries. There was also a template on Bakerella for baskets and fry holders, so I made a few of those to up the presentation. I think it made the whole thing.

They were a hit! I never actually tried them, but I heard nothing but good things. They sure looked pretty, and that’s all that really matters to me.

Vanilla Cupcakes (Adapted from Ming Makes Cupcakes)
Ingredients
3/4 cup whole wheat flour
3/4 tsp baking powder
1/8 tsp salt
1/4 cup unsweetened applesauce
1/4 cup agave nectar
1 egg
1/2 tsp vanilla
1/4 cup almond milk

Preparation
1. Mix flour, baking powder and salt in a large bowl.
2. Beat in applesauce and agave nectar. Mix thoroughly.
3. Beat in eggs, vanilla and milk. Mix until just combined.
4. Full cupcake liners 2/3 full. Bake at 400F for 20 minutes.
